Garides Saganaki (Greek Shrimp Saganaki) with Basil Olive Oil

The classic Greek shrimp dish is prepared by simmering the succulent seafood in a luscious tomato sauce, accompanied by creamy feta cheese and enhanced with the fragrant essence of basil-infused olive oil.

Ingredients:

  • 1 lb (450g) shrimp, peeled and de-veined
  • 2 tbsp basil-infused olive oil (plus extra for drizzling)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 tbsp tomato paste
  • ½ tsp dried oregano
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • ½ cup crumbled feta cheese
  • 2 tbsp fresh parsley, chopped
  • Lemon wedges for serving

Instructions:

  1. Sauté the aromatics: Heat the basil-infused olive oil in a pan over medium heat. Add the onion and garlic, sautéing until softened.
  2. Make the sauce: Stir in the tomato paste, diced tomatoes, oregano, red pepper flakes, salt, and pepper. Simmer for 10–15 minutes until the sauce thickens.
  3. Cook the shrimp: Add the shrimp to the sauce and cook for 3–4 minutes until they turn pink.
  4. Add the feta: Sprinkle the crumbled feta over the top and cook for another 2 minutes, just until the cheese softens.
  5. Finish with flavor: Drizzle with extra basil-infused olive oil and garnish with fresh parsley.
  6. Serve: Enjoy with crusty bread or over orzo for a complete meal.
